Soft Tofu Yeul Ramen Recipe
Soft Tofu Yeul Ramen is a hearty and satisfying dish that is known for its rich, spicy flavors and its ability to warm you up on a cold day. It’s a popular comfort food in Korea and is enjoyed by many people around the world.
Ingredients
- 2 packs of ramen noodles
- 1 block of soft tofu (sundubu)
- 4 cups of water
- 2 tbsp of vegetable oil
- 2 tbsp of gochujang (Korean chili paste)
- 1 tbsp of gochugaru (Korean chili flakes)
- 1 tbsp of minced garlic
- 1/2 onion, chopped
- 1/2 cup of chopped mushrooms
- 1/2 cup of bean sprouts
- 2 green onions, chopped
- 1 egg (optional)
- Salt to taste
- Sesame oil (optional)
Directions
- Start by boiling the ramen noodles in a pot of boiling water for about 3 minutes or until tender. Drain the noodles and set aside.
- In a separate pot, heat up the vegetable oil over medium-high heat. Add the chopped onions and minced garlic and sauté for about 1 minute or until fragrant.
- Add the gochujang and gochugaru to the pot and stir until well combined. Cook for an additional 2-3 minutes or until the mixture becomes fragrant.
- Add 4 cups of water to the pot and bring to a boil. Once boiling, add the chopped mushrooms and bean sprouts and let simmer for 5-7 minutes.
- Gently add the block of soft tofu to the pot, being careful not to break it apart. Let the tofu simmer for another 5-7 minutes.
- Add the cooked ramen noodles to the pot and stir to combine all ingredients. Let simmer for an additional 2-3 minutes.
- Crack the egg directly into the pot, if using, and let cook for 2-3 minutes or until the white is set but the yolk is still runny.
- Season with salt to taste and add chopped green onions to the pot.
- Serve hot in individual bowls, garnished with a drizzle of sesame oil (optional).
