Homemade Ricotta Cheese

• 4 cups whole milk
• ½ cup heavy cream
• ¼ teaspoon salt
• 3 tablespoons OTTOGI Vinegar

1. Combine milk, cream, and salt in a large pot.
2. Heat over medium heat while stirring just until the mixture comes to a boil.
3. Remove from heat and add vinegar. Stir just a few times to combine.
4. Leave the mixture to sit undisturbed for 30 minutes.
5. Line a strainer with 2 layers of damp cheesecloth. Gently spoon the ricotta curds into the strainer.
6. Allow to drain 30-45 minutes.
