Tempura Udon Noodle Soup with Vegetables

  • 1 Ottogi Tempura Udon Flavor Noodle Bowl
  • 2 cups of water
  • 1/2 cup sliced mushrooms (shiitake or button)
  • 1/2 cup chopped bok choy or spinach
  • 2 green onions, chopped
  • 1/2 cup tempura shrimp or vegetables (store-bought or homemade)
  • 1 boiled egg, halved (optional)
  • 1 teaspoon soy sauce (optional)
  • 1 teaspoon mirin (optional)
  • Sesame seeds for garnish

  1. Cook the udon noodles from the Ottogi Tempura Udon Flavor Noodle Bowl according to the package instructions. Drain and set aside.
  2. In a pot, bring 2 cups of water to a boil. Add the seasoning packet from the noodle bowl to the boiling water and stir well to create the broth.
  3. Add the sliced mushrooms and chopped bok choy or spinach to the broth. Cook for 2-3 minutes, or until the vegetables are tender.
  4. Add the cooked udon noodles to the pot and gently stir to combine with the broth and vegetables.
